Les Chanoines were the first monks to elaborate wine in Chablis, in the cellars of the Obédiencerie. This cuvee is a tribute to them. Harmony, fresh acid, beautiful fruit and a delicate touch of sheel-like minerality.

Whole bunches are collected in a pneumatic press, then 12 hours settling at 12°C. 15 days of fermentation at 16°C in stainless steel tanks.

DOMAINE LAROCHE
Laroche is closely linked to the history of Chablis. It owns 90 hectares of vineyards situated amongst the best crus. Its headquarters, the Obediencerie of Chablis, reveals a heritage dating back from the Middle Ages when the Canons of Saint Martin of Tours were making wine.

Bourgogne Laroche also owns La Chevalière in the Languedoc region and produces Chardonnay wines that are its glowing signature around the world. The estate has established partnerships with producers in cooler-climate areas such as the Orb Valley, Limoux and Cévennes. Key to the wine’s success is the performance of the site’s cellar techniques with its energy management. It was awarded the Special Jury Prize of the Trophées de la Performance Énergétique de l'Industrie Agroalimentaire in 2021.
